These treats are like artichoke/ spinach dip in a pastry.

Artichoke /Spinach Puffs (Prep. time 40 minutes. 9 servings

6 canned artichoke hearts, chopped

1/2 C whipped cream cheese

1/2 C. mild white cheddar

2 C. wilted spinach will the moisture squeezed out

salt/ pepper

1 puff pastry sheet, thawed, rolled to 1/4 inch thick and cut into 9 piece (3 rows of three squares)

Preheat oven to 375.  Prepare the pastry, spinach and artichoke hearts.  Spread the cream cheese on the pastry squares leaving 1/4 inch or less border to seal.  Mix the artichoke, spinach, cheddar and salt and pepper (you can add a little grated nutmeg for a warm flavor note.  Put a dollop of the artichoke mix in the middle.  Do not over-fill.

Wet the borders of the pastries.  Bring corners together in the middle. Pinch.  Pinch the sides to seal.  Brush pastries with egg wash to brown.  Bake about 20 minutes until brown, puffed and crisp.  Can be served with a little spoonful of sour cream on top.

(Experiment with different cheeses if you like.  I tried Feta and did NOT like it.)
