To cap off about 8 years of Foodie Friday, an easy, all-in-one fast appetizer that will do you proud for any occasion.  Enjoy.

Shrimp Cocktail Appetizer Bites (prep. time about 15 minutes.  Serves a whole bunch)

1 Bobli bread shell (thin crust)

8 oz. cream cheese softened

1 C. cocktail sauce

8 oz. salad shrimp thawed, well drained, patted dry (it wouldn’t hurt to use a little more shrimp, maybe even another whole 8 oz. package)

Homemade Cocktail Sauce:

1 C. ketchup

3 heaping Tb (or more to taste) grated horseradish

1 tsp. Worchester sauce

½ tsp. mustard powder

Pinch of salt and cracked black pepper

Spread the cream cheese evenly right to the edge of the bread shell.  Repeat with the cocktail sauce.

Slice into bite-sized squares with a pizza wheel before evenly distributing the shrimp over the top.  Press the shrimp lightly into the cocktail sauce so it isn’t as likely to fall off when your guests take a piece. Serve chilled.

Lasts several days in the refrigerator since the cream cheese acts as a barrier keeping the cocktail sauce from soaking into the bread.  You can add a little color by sprinkling some diced parsley or dill over the top.
