Foodie Friday Homemade Granola
Looking through the cupboard, inspiration came from the discovery of a bag of old fashioned rolled oats, some dried fruit and local honey. I came up with ingredients for homemade granola mostly from things in the pantry. See what you can do with things you have as some things are still hard to find at the store.
Homemade Granola (Prep. about 1 1/2 hours. Serves 6)
2 C. old fashioned oats
1 C. raisins
1/4 C. dried cranberries (optional)
1 Tb. cinnamon
1/3 C. chopped almonds
Leftover Easter chocolate, chopped
1/2 tsp. lemon zest (dried or fresh)
1/4 tsp. ground ginger
1/4 C. vegetable or canola oil
1/4 C. coconut milk
3 Tb. honey
Heat oven very low to 300. Mix dry ingredients. In a sauce pan, over medium low heat, mix oil, milk and honey until combined and warms to just under a simmer. Stir the wet ingredients into the dry (except for the raisins, dried fruit and chocolate) and combine well. Spread the mixture onto a parchment lined baking sheet, lightly sprayed with no-stick spray. Bake 30 minutes at 300. Stir and rotate pan about halfway through. Reduce heat to 270 and bake about another 30 minutes until brown and starting to get crispy. Turn off oven and allow to crisp a little more in the warm oven. Once cool, toss in the dried fruit, chocolate, coconut slivers, more nuts, whatever you like.
Serve as cereal, with almond milk, regular milk, over yogurt or ice cream or just as a snack.
