Okay, going out for Valentine's Day, right?  Just do a simple, fun and silly sandwich leading up.  "The Husband" asked where I came up with this and I had to say it just came to me, but, apparently, it's a favorite in other parts of the country.  Put meatballs in if you aren't giving up meat for Lent.

Spaghetti-Stuffed Grilled Cheese Sandwich (Prep. time 10 minutes if using left over spaghetti.  Serves one)

1 C. leftover spaghetti in sauce (heat up a little first)

2 slices sour dough bread

2 slices American cheese

¼ C. shredded mozzarella cheese

2 Tb. softened butter

Heat a sauté pan over medium-high heat.  Butter one side of a bread slice and place in the warming pan.  Quickly layer 1 slice of American cheese, the spaghetti and mozzarella cheese.  Butter the other slice of bread and put on top, buttered side up.  Cook the sandwich on the first side until golden brown and carefully flip to the other side.  Once the other side is brown and cheese melted, remove from the pan and cut in half or into smaller squares to share as an appetizer.  Serve with extra spaghetti sauce or tomato soup.
