“Delightfully Sunny” Grilled Citrus Shrimp Foodie Friday Recipe
You can come up with some surprising and delicious dishes with just what you happen to have on hand, including a citrus-y, grilled shrimp using a commercially bottled orange punch drink!
“Delightfully Sunny” Grilled Citrus Shrimp (Prep. time about 1 hour, 30 minutes including marinating time. Serves 2)
½ lb. raw Carolina shrimp, peeled
½ C. “Sunny” orange punch
1 T. honey
Zest and juice of ½ lemon
¼ C. balsamic vinegar
¼ C. olive oil
1 tsp. red pepper flake (or more to taste)
Pinch each of salt and cracked black pepper.
Warm the orange drink for a few seconds in the microwave and stir in the honey. Warm another few seconds, up to :30 to help the honey dissolve into the orange drink. Whisk in the lemon juice and zest, balsamic vinegar, olive oil, red pepper, salt and black pepper. (for a little more heat, you can add a splash of hot sesame oil, no more than ¼ tsp.) Place the peeled shrimp in a plastic zip bag with the marinate. Shake to coat and marinate in the refrigerator for 1 hour. Heat grill to medium high. After the shrimp marinates, mount on metal skewers (if using wood skewers, make sure they are soaked overnight to prevent them from burning) . Grill shrimp for about 3 minutes on each side. Since Carolina shrimp are pink while raw, they are more tricky to judge if they are done but a couple minutes a side should be enough to cook them to a firm snap, but not overcooked.
Serve over noodles, rice or couscous. Garnish with sprigs of fresh dill.
(Improvised Alfredo Noodles <improvised noodles since, again, we took what we had laying around the camper pantry and refrigerator>)
½ bag large egg noodles
3 Tb. margarine
2 Tb. cream cheese
1-2 slices American cheese (about ¼ C.)
Water to loosen the sauce.
Salt and pepper to taste
Boil salted water. Cook noodles to al dente and drain. Stir in the butter and cream cheese to melt. Stir in the American cheese, adding a little water and heat over a very low flame until the cheese is all melted and coats the noodles. Season with salt and pepper to taste.)
