Caprese Salad Foodie Friday Recipe
Fresh tomato, basil, olive oil and mozzarella may be more of a snack or appetizer than a salad but still a nice addition to a picnic.
Caprese Salad (prep time: 5 minutes)
Per serving:
1 large tomato cut into slices
fresh basil leaves
Mozzarella cheese, sliced
balsamic vinegar
olive oil
cracked black pepper
Arrange tomato slices on a plate, top each with mozzarella and torn basil leaves. Crack black pepper to your liking and drizzle with balsamic vinegar and olive oil.
Be adventurous and try some of the heirloom varieties of tomato. I grew a variety called 'Mr. Stripey' with red and yellow striped fruit that had a slightly different flavor from most red varieties and almost no seeds!
