Several dozen people are about to be hired for the Perkins Restaurant and Bakery in Apalachin that is expected to open next month.

Beth Ann Smith, president of Rajumaanar Enterprises, said nearly 100 jobs need to be filled for the business that will be located adjacent to the Comfort Inn on Route 434.

Smith said the March blizzard slowed construction of the new building for a few days. She said workers have made significant progress since that storm.

Speaking on WNBF Radio's Binghamton Now program Tuesday, Smith said she now hopes construction can be wrapped by the end of this month. She said it's a "very busy time" as crews work to finish the building and prepare to install equipment in it.

Smith said she now is aiming to open on June 12, although that could be moved back a few days depending on last-minute details in making certain everything is ready.

People interested in working for the restaurant may submit an application at the neighboring Comfort Inn. Although some managers already have been undergoing training at a Perkins facility in Pennsylvania, Smith said additional employees still must be hired.

Smith said plans call for the restaurant to be open around-the-clock, seven days a week.
