Construction work has resumed at the site of the region's first Qdoba Mexican Eats restaurant.

The Vestal town planning board approved plans for a Qdoba location in September 2022.

The structure for the new restaurant is being built at 2512 Vestal Parkway East, across from the Town Square Mall.

Some preparation work was done at the site in late 2023 but the start of constructing the building was delayed.

Construction crews have been busy at the site over the past couple of weeks.

Catherine Cornelius of QBEC LLC said the Qdoba project is moving forward. She told WNBF News she expects the restaurant will be able to open by September.

There now are 17 Qdoba locations in New York state. The closest - at the Syracuse airport - opened two months ago.

Cornelius said the Vestal restaurant will be open seven days a week. The 2,100-square-foot building will have a drive-thru lane. It also will offer delivery.

Although some Qdoba locations offer a breakfast menu, that won't be the case initially with the Vestal Parkway restaurant. Cornelius said that could change at some point.

Cornelius said QBEC may consider opening other Qdoba locations in the future in markets like Syracuse, Elmira and Ithaca.

Qdoba now has about 800 restaurants in the United States and Canada.
