I had a request to make Rum Balls but I naturally had to do something with the Kathy twist. 

Rum Balls & Comfortable Balls (Prep. time about 15 minutes per batch. Yields 2-3 dozen depending on size)

Rum balls

1 C. confectioner’s sugar (plus another ½ C. to roll the completed cookie in)

2 Tb. cocoa

¼ tsp each allspice and ginger

½ C. spiced rum

1 Tb. light corn syrup

2 ½ C. crushed vanilla wafers

1 C. chopped walnuts

Mix all ingredients together.  You will have to use your hands to get the mix completely incorporated.  Roll into balls and place on a parchment lined baking sheet.  Roll in the reserved powdered sugar and chill. 

Comfortable balls

2 ½ C. crushed ginger snap cookies

1 C. confectioner’s sugar

½ C. Southern Comfort

1 Tb. light corn syrup

1tsp. vanilla extract

1 Tb. honey

3 Tb. cinnamon sugar

Mix together everything but the cinnamon sugar and form into balls.  Roll in cinnamon sugar and place on the parchment lined baking sheet and chill.

After chilling for at least an hour, the cookies can be stored at room temperature in a sealed container.  Place wax paper in between layers.  The cookies should sit for a few days so the alcohol can mellow.
