Workers are putting the finishing touches on the Binghamton area's first Qdoba Mexican Eats restaurant.

The business will be located at 2521 Vestal Parkway East, across from the Town Square Mall.

Qdoba has more than 800 restaurants in the United States, including 19 in New York. A Qdoba restaurant opened last January inside the Syracuse airport terminal building.

Catherine Cornelius, a partner in the company that will operate the new Vestal location, said things "are moving quickly now."

The project was approved by the Vestal planning board three years ago. Although some work began at the site, construction was delayed for a time. Work on the restaurant resumed last spring.

Cornelius said doors and windows recently were installed in the building. She said tile now is being put in. The kitchen equipment is expected to arrive at the site soon.

There's no target date for the restaurant's opening but Cornelius said it could be in operation by the end of next month.

The 2,100-square-foot Vestal location initially will be open seven days a week for lunch, dinner and snacks. Cornelius said a breakfast menu may be available in the future.
