S’More Pie Recipe  (prep time about 30 minutes, plus chilling time)

1 C. thawed whipped topping

1 box dry chocolate pudding mix

½ C. milk

1/3 C. plus 3 Tbl. butter

1 ½ C. crushed graham crackers

3/4 C. sugar

2 C. mini marshmallows

2 C. chocolate chips

Preheat oven to 375.  Melt 1/3 cup of butter in a sauce pan.  Stir together graham cracker crumbs and ¼ cup sugar.  Add melted butter and combine.  Once the mixture is cool enough to handle, use your hands to make sure all crust elements are well incorporated. Press into a pie pan.  In the same pan in which the butter was melted, melt the squares of baker’s chocolate, 3 tablespoons butter and stir in ½ cup sugar until the sugar is dissolved and the chocolate sauce (chocolate ganache) is smooth and shiny. Spread the chocolate evenly in the bottom of the pie crust. Top with the mini marshmallows and all but about ½ cup of the chocolate chips.  Bake until the crust is set, the marshmallows are slightly brown and the chocolate chips are melted.

Prepare the chocolate pie filling by stirring together the pudding mix and milk and folding in the whipped topping.  Once the pie crust has cooled. Spread the filling on top, being careful not to disturb the marshmallow layer as much as possible.  Chill the pie in the refrigerator of freezer for at least a half hour.  Top with the remaining chocolate chips and more whipped topping if you want and serve.

(Tip:  the butter in the crust can really solidify in the refrigerator.  The pie is much easier to cut if you let it sit out for a few minutes before slicing with a sharp knife.)
