Smoked turkey noodle soup eliminates unnecessary waste. But first, find someone with a smoker.  Okay, you can just roast a turkey normally and pick the meat off that.  The smoked turkey, however, has a very unique taste.

Smoked Turkey Noodle Soup (prep time: 55 minutes after cooking the turkey.  12 servings)

½ onion medium diced

2 carrots medium diced

2 ribs celery medium diced

4 cloves roasted garlic chopped (finely diced raw garlic can be substituted)

1-2 C. sliced mushrooms

1 yellow potato (like Yukon Gold) medium diced

32 oz. each chicken stock and water

2 Tb. olive oil

1 turkey carcass

the meat picked from the carcass

extra wide egg noodles

1 Tb. poultry seasoning

1 Tb. parsley

1 tsp. soy or Worchester sauce

salt & pepper to test

Simmer the picked turkey carcass in water and chicken stock for 30 minutes.  Remove the bones and allow to cool so any remaining meat can be picked off. Add the vegetables to the simmering stock along with the soy, poultry seasoning, parsley, salt and pepper. Simmer another 15 minutes and add the turkey meat.  Taste for seasoning. In a separate sauce pan, bring water to the boil and cook the egg noodles until barely done since they will continue to absorb liquid in the soup.  Add the cooked noodles and serve soup with rye or other hearty bread.
