Shrimp Cocktail Pastries (Prep. time about 20 minutes)

5 Thawed Phyllo pastry sheets

9 cooked shrimp

¼ C cream cheese, softened

2 Tbl. Cocktail sauce

½ stick butter

Preheat oven to 350. Melt the butter and set aside.  Have a damp cloth handy to cover the phyllo while you work to keep it from drying out and tearing.  Layer sheets of phyllo, brushing each sheet with butter before adding the next.  Cut the pastry into 9 squares. (A pizza wheel works well.)  Put a dab of cream cheese in the center of each square, top that with a shrimp and a little cocktail sauce.  Fold up the four corners to meet in the middle. Place on a tray and bake for about 15 minutes until golden brown and crisp.  Can be served hot or cold. (Watch out for the molten cream cheese if you serve them hot)

If you really want to be fancy, you can tie a little sprig of chive around the middle to make it look like a little package.

Believe it or not, I made these in the camper using just the toaster oven.
