New England-Style Lobster Roll (prep time about 15 minutes.  Serves 4)

2 lb. cooked lobster meat (3, 1 lb. steamed lobsters)

1 rib celery, diced

½ C. mayonnaise

1 tsp.  Old Bay Seasoning

pinch salt and pepper

1 tsp. fresh dill

1 tsp.  chopped parsley

1/4 tsp. paprika

splash of lemon juice

3 Tb. melted butter

leaf lettuce

4 New England-style hot dog rolls. 

If you can find just the lobster meat, it makes things a lot faster. It took me about an hour and a half to shuck the three steamed lobsters.

Cut the lobster meat into large chunks. add the diced celery, mayonnaise, OldBay, salt, pepper, parsley, dill and paprika. Gently fold the mixture together as to not break-up the lobster meat.

Brush a little melted butter on both sides of the hot dog rolls and grill in a hot skillet or on the grill until brown on each side.

Press lettuce leaf into the grilled rolls, fill with the lobster mixture and drizzle with a little lemon juice and about a tablespoon of the remaining melted butter.  Garnish with springs of fresh dill (optional). 

An alternate way of serving the lobster is as a lobster lettuce boat. Just leave out the rolls.
