Time to start thinking about how to re-use those holiday leftovers aside from the usual turkey sandwiches, turkey soup, turkey pie.....

Leftover Turkey* Goulash (prep time, about 20 minutes)

1 box elbow macaroni

1 lb. cooked turkey, small dice or shredded (depending on what texture you prefer)

1 green bell pepper, diced

1 medium yellow onion, diced

1 can diced tomatoes

2 Tb. paprika

1 Tb. turmeric

1 tsp. cumin

1 tsp. sugar (to taste)

salt, pepper

½ tsp. red pepper flakes (optional)

1 Tb. olive oil.

Boil salted water for the pasta.  Heat olive oil in the bottom of a large pot and sauté the pepper and onion until tender.  Stir in the diced tomatoes, spices, salt and pepper.  Simmer over medium-low heat until the tomato sauce starts to thicken.  Add sugar, a little at a time, tasting until the sauce reaches the desired sweetness. Stir in diced turkey to warm.  When the pasta is al dente, drain and toss in the prepared sauce and turkey.

Serve with a sprinkling of parmesan cheese and buttered bread.

This recipe is traditionally made with ground or diced beef, but it is a good way to use leftover turkey or chicken.
