Hot Turkey Sandwiches (prep. time 10 minutes)

¼ lb. leftover turkey or sliced deli turkey (per sandwich)

American cheese slices

Sliced tomato

Hard rolls

2 Tb. mayonnaise per sandwich. 

Set a toaster oven (or full-sized oven if you are making several sandwiches) to bake and 350 degrees.  Assemble the sandwiches, leaving out the mayonnaise.  Wrap each in aluminum foil and heat in the oven for about 10 minutes until the meat is hot, cheese is melted and the rolls are hot and crunchy. Open the sandwich and spread on mayonnaise if you like.

These quick, hot sandwiches can be made with anything you like.  My mom used to always make them with ham, cheese and mustard.  You can even just go with cheese or cheese and tomato.
