Okay, again, trust me on this one. (For the ravioli filling.)  Texture and flavor are great! If you are too afraid, substitute ricotta cheese or even cook down and puree some butternut squash with a little honey, nutmeg and use that as the ravioli filling. Seriously, though, the hummus and goat cheese are awesome!

Vegetable Ravioli Surprise Soup (Prep. time about an hour, including making ravioli.  Serves 8+)

4 C. vegetable stock

1 Tb. olive oil

½ yellow onion, diced

1 C. diced carrot

½ C. diced celery

1 C. broccoli florets

½ C. each corn, green beans, diced tomato

1 C. new potatoes cut into bite-sized pieces

1 can white beans, drained and rinsed

wonton wrappers

6 oz. soft goat cheese

3 Tb. plain hummus

salt, pepper

Soy sauce to taste

Mix the goat cheese and hummus together and set aside.  Keep the wonton wrappers whole or cut to make smaller raviolis.  Wet the edges of the wonton wrappers and spoon a small amount of the goat cheese/ hummus filling in the center.  Be careful not to over-fill.  Fold the edges of the wonton over and pinch or press the edges with the tines of a fork to seal.  Set aside.  Heat the oil over medium-high heat in a large stock pot.  Saute the onion, carrot and celery until the vegetables start to become tender.  Add the vegetable stock and bring to a boil.  Add the rest of the vegetables, salt and pepper and reduce to a simmer.  Once the potatoes and broccoli become tender, carefully drop the raviolis into the soup and simmer until they rise to the top.  Add soy sauce and more salt or pepper to taste.

*(instead of doing ravioli, you can always add in noodles that are not stuffed. The ravioli is a great surprise I prefer.)
