Eggs Benedict (otherwise known as “How to Poach an Egg”.  Nothing to be embarrassed about. Many people don’t know the best way to poach an egg and keep the white fairly intact.) Prep. time 10-15 minutes. Serves 1

Hollandaise sauce (can use left over sauce from previous recipe)

3 egg yolks

½ C. cold butter cut into cubes

juice of 1 lemon.

English muffin

2 eggs

Canadian Bacon or a slice of ham

1 Tb. white vinegar

cracked black pepper 

Start sauce first and set aside. 

Over very low heat, whisk the egg yolks and whisk in half the butter until melted and incorporated.  Whisk in the remaining butter, until melted and the sauce is smooth.  Squeeze the lemon juice through your fingers to catch the seeds.  Remove from heat.

Depending on your toaster, you may need to start the English muffins before you start the eggs.

Bring a small sauce pan, filled a little over half full with water to a simmer.  Add the vinegar.  The vinegar keeps the whites from fringing off all over the place.  Crack the eggs, one at a time, into a small bowl or tea cup.  Hold the edge of the cup at the surface of the water and gently slide in.  Use a slotted spoon to gently coax the white around the yolk.  Repeat with the second egg. Remove from heat.  Place the ham on the toasting muffins to warm.  The poached egg will be done between 2 and 4 minutes, depending on how runny you like your yolks.  Lift the eggs out, one at a time with a slotted spoon and drain briefly on a bit of white bread or paper towel.  Place the egg on top of the muffin and ham and spoon Hollandaise sauce over the top.  Remember, if your sauce breaks or clumps, whisk in a little water and it will smooth right now. Crack some black pepper on top.  You don’t need salt since the ham/Canadian bacon is salty enough.

As you can see from the photo, Eggs Benedict is not a mysterious, fancy dish out of the home cook’s reach.  That’s why I served it to my husband on a paper plate in front of the TV.
