This imitation of the popular stuff in the yellow box isn’t baked and takes about a third of the time as regular macaroni and cheese. (And this way, you know what is really going into it.)

Creamy  Boxed Macaroni and Cheese Knock Off (Prep. Time 30 minutes. Serves 4-6)

1 box elbow macaroni or shells

1/3 brick Velveeta Cheese, cubed

1 C. shredded sharp cheddar cheese

2 Tb. Butter

2 Tb. Flour

2 ½ to 3  C milk

Bring a saucepan of salted water to a boil and cook the macaroni per package instructions.  In a medium sauce pan, melt the butter and whisk in the flour.  Cook until the flour starts to turn a little brown.  Whisk in milk and continue to stir until the milk almost comes to a boil.  Stir in the cheeses and continue to stir until melted.  Drain the macaroni and stir into the cheese sauce.  Garnish with sliced olives or other add-ons if desired. I even made tiny meatballs for the husband and he really liked that.
